Plain and simple, the perfect chocolate chip cookie is the one you love best. More words than you could shake a spatula at have been written about "the perfect chocolate chip cookie." But what is that elusive being, anyway? So here's the deal: my goal with this post is to show you how to take a basic chocolate chip cookie recipe and give it the texture you prefer: light and crunchy thin and crisp or soft and chewy. Your oven, pans, ingredients, and even your micro-climate and the weather affect what you bake. So I'm not fond of trying 87 different takes on a recipe to get it exactly right.įirst, I see that as a waste of time if you can get 95% of the way there in the first three tries, you're good.Īnd second, having been developing recipes for King Arthur Flour for over 25 years, I know that what comes out of my home kitchen won't be exactly what comes out of yours – even when you follow the recipe exactly as written. I put my heart and soul and brain into everything I bake – but I also put those three entities into a zillion other things important to me: like family, friends, counseling women with health issues, and volunteering at various non-profits. I don't use a cookie cutter, braid bread dough (aside from a basic 3-strand), or decorate cakes. Let me tell you up front: I'm devoted to simplicity in food prep, and that includes baking. The interaction between sugar and fat and flour, baking time and temperature – plus a large measure of experimentation done right in your own kitchen – is how to nail your favorite chocolate chip cookie texture. Meanwhile, the air in the center cools, which causes the cookie to deflate slightly though when fully baked, the structure lent by eggs and flour will help it retain some of its rise. What makes a chocolate chip cookie chewy? Or crisp, or crunchy? Remember that liquefied sugar? Well as the cookie cools, that liquid sugar hardens up, which can give the cookie an extra-crisp, toffee-like texture around the edges. The cookie cools: Once it comes out of the oven, the process isn't over yet.It produces nutty, savory, toasted flavors. The Maillard reaction occurs: Proteins in the flour and the eggs brown, along with the sugar, in a process called the Maillard reaction-the same reaction responsible for giving your hamburger or bread a brown crust.Sugar caramelizes: At its hottest areas-the edges and the underbelly in direct contact with the baking sheet-sugar granules melt together, turning liquidy before starting to caramelize and brown, producing rich, sweet flavors.

Keep these four benefits in mind as you shop for compression stockings to wear after surgery. Recovery from surgery is a long journey, but wearing compression socks can help ease the way. Compression stockings are also noninvasive and relatively inexpensive in the scheme of medical treatments, making them a great complement to other treatments. Graduated compression stockings improve circulation and reduce swelling, which helps prevent DVT and spider/varicose veins as well as speed up healing times. Īll of these factors combine to make your recovery safer overall. Surgery increases your chances of developing DVT, and having to remain sedentary also contributes to your risk - o nly walking early on and elevation truly increase venous blood flow but wearing compression socks after surgery can help decrease the risk of developing DVT. Signs of DVT include pain in your leg, red or discolored skin and a feeling of warmth. If the blood clot breaks off and travels, it can cause severe problems in the lungs in the form of a pulmonary embolism. Such blood clots usually form in the legs, but they can manifest in other deep veins of the body as well. However, if your doctor instructs you to wear your compression stockings at any other time (such as during sleep), follow their rules first and foremost.ĭeep vein thrombosis (DVT) is a serious condition that occurs when a blood clot forms deep in the veins. For best results, compression stockings should be donned before you have a chance to swell very much, usually in the early morning right when you wake up. Wearing compression stockings after surgery helps reduce swelling because the specially woven fabric does not allow your skin to expand, forcing the fluid to dissipate instead of settling in one place and causing swelling. However, extreme swelling is not, and it can hamper your recovery and even lead to complications. Some level of swelling is common and even expected after surgery. This pressure encourages venous circulation even when you can’t move, making compression stockings a great solution for post-surgery patients on bed rest. Graduated compression stockings encourage your blood to keep flowing by applying gentle pressure that tapers up your legs. However, just lying around on the bed or the couch is really bad for your circulation since movement makes your heart pump more and stimulates venous blood flow by working your muscles. Your movement may be limited after surgery, so the surgical site can heal. If you think you might benefit from wearing compression stockings after surgery, but your doctor hasn’t prescribed them, talk to them before you decide to get yourself some. In fact, graduated compression stockings offer four distinct benefits for post-surgery patients, from reducing swelling to protecting against DVT.Ī caveat before we break down these four advantages: No matter how beneficial compression stockings are, you should not wear them after surgery without the explicit instruction of your doctor. If you’ve got a major surgery coming up, especially if that surgery affects your lower leg, your doctor may recommend wearing compression stockings after surgery to help boost your recovery.

We have to find common ground and we need to work together to carve out that path.” “We want to be a partner with them, and take into account their vision of an urban forest, but if it’s open to the public, we can’t just let it be overgrown. “We’re really grateful to the community group who have been volunteering their time tremendously, but native plant vegetation gets really strong root systems that can cause blockage and flooding,” she said. And it does need access to do the maintenance that the site requires, Meisami-Fard said. This highlights the reality: Wild areas may be beautiful, but they’re also a problem for the city, which has to worry about liability issues and security for surrounding neighbors. It is the opposite of the habitat restoration aesthetic being promoted,” Mercer added. “There was no reason for the clearing, and it disturbs the native bees, the soil invertebrates and all the other animals that use the area for habitat. Sanitation and Councilwoman Katy Yaroslavsky. “It was extremely upsetting that even after asking that the native plants not be ‘neat and tidy’ and the native trees not be pruned (it is the wrong time of year), many plants that were not in the creek and not in the way of equipment were mowed, damaged or removed,” Mercer wrote in a May 16 letter to L.A. And to the volunteers’ consternation, they tidied up the site like a traditional no-leaf-left-behind landscape. But when the city landscaping crew came in early May to dredge out the cattails in the stream, they damaged some native plants with their machinery. Habitats are supposed to be a little wild, with sprawling shrubs and leaf litter on the ground, creating a natural mulch, shelter, food and nesting materials. The video creator identified himself as Jowii, a friend of Martinez who posted the video to his YouTube channel JowiiTV.īay Area ABC News affiliate ABC 7 reported late last month that the massive Anaconda burrito had gained the local restaurant a new national following, after a Facebook video showing the burrito being made went viral: “Definitely one of the best tasting ones.” “It was really good, very good burrito,” Martinez said. He added that he predicts he will not be the last to complete the feat. “That was a lot heavier than I thought,” Martinez said, after downing the final bites. And though every person that had tried before failed, Martinez managed to put it all down in just 13 minutes and 8 seconds. If so, Martinez would receive the $23 burrito for free.Īdding a touch of drama, the whole eating experience was timed. This is probably the longest burrito I’ve done.”Īnaconda Burrito creator Edwin Espinoza expressed hope that Martinez could be the first of the many who have tried to complete the task. “So I don’t think I’ll have an issue, although this one is pretty long. “Burritos are my specialty,” said Martinez, who is ranked 18th in the world for competitive eating by Major League Eating. Weighing in at five-and-a-half pounds, and at a length of three feet, the burrito is usually cut up and fed to a family of four, according to the video’s creator. And we finally did.Competitive eater Pablo Martinez challenged himself to become the first person to scarf down the monster “Anaconda” burrito at Fresno, California’s Taqueria Yarelis - and his buddy documented it all on video. “We wanted to have something that would catch everyone’s attention. We wanted to do it different,” Espinosa told BuzzFeed. “Everybody here in Fresno, they always had the same … tacos, burritos. And the taqueria is preparing to open a second location near Herndon and Willow avenues. The success brought on by the monster burrito made it possible for Espinosa to buy a house, he said. In an interview with BuzzFeed, the taqueria’s Edwin Espinosa says the place makes 50 to 70 Anacondas a day. Lim, while sipping a beer at Tioga-Sequoia in the video, decrees the Anaconda “worth it.” The $32 Anaconda was up against a $4.50 “chivichanga” from Sonoratown restaurant in Los Angeles and an $11, cheese-encrusted breakfast burrito from Low Key Burritos in downtown L.A. Spoiler alert: Lim and Ilnyckyj are genial dudes and usually generous with their praise. The video shows hosts Steven Lim and Andrew Ilnyckyj at a table at the North Fresno Street taqueria, measuring the monstrous meal and enjoying a few bites. The question at the end of each episode: Which of the three was worth the cost? Is a $32 Burrito ‘Worth It’? The BuzzFeed team’s trip to Fresno, which included a stop at Forestiere Underground Gardens and Tioga-Sequoia Brewing, kicked off the sixth season of “Worth It.” The show travels the world and compares items - food, more often than not - at three price points. Then, last week, the taqueria got a signal boost from BuzzFeed’s “Worth It” video series. A Facebook post that debuted the ultra-big burrito in November 2016 now has more than 36 million views. Three years ago, Taqueria Yarelis put itself on the viral-video map with the Anaconda Burrito, a 3-foot-long beast of a meal. A small but growing taco joint in Fresno has gotten a lot of mileage out of its humongous signature entree.
